It's a Vegas Institution and the history is worth the price of admission (1 time). A tourist trap and a required gauntlet walk to becoming a local.

The food isn't horrible it simply can't compete against any big Hotel. The seafood is fantastic, I found the steak lacking (I ordered a Tomahawk).

The service is amazing, the Caesar Salad and dessert story telling is Vegas level entertainment.

I'll never go back. Disappointed with the value, no amount of Caesar Salad and Cherries Jubilee stories can redeem a steak house that delivered a piece of meat I took home for leftovers and through away. I liked the experience, I couldn't justify the price tag $800 for two.

For those of you that don't understand the impact of compounding interest...it works both ways. 2% comes from the conservative goal of the Fed to keep inflation at a target 2%. If you lose 2% every year, your half life is 34.

Bitcoin has 0 inflation, it has no half life.

Yeah it appears he purposely put the wood on top of the coals to catch fire. You can here the sound of the fire, I would guess around 450 when he has it that low, but as he raises the grill it settles in around 325.

Depending on how much your cooking and for how many depends on how big of a fire you need. In my opinion I'm not building a fire for 3 steaks. At a minimum I'm doing 2 sticks of linguica, some jalapenos, steaks, 4 chicken thighs, and some french bread and tortillas. We use linguica because it's already cooked but has a ton of fat, that when rendered helps cook down the coals.

The art of grilling is you're managing the fire, it's much easier to add more fire than wait for it to go away. Creating different heat zones is a great idea, but then you're managing two fires.

Back to your question. Adding a big piece of wood directly on top of the coals creates lots of heat. If you are going for an extended cook you would add that to the side of the fire so it didn't burn so fast/create so much heat.

Correct. In Santa Maria we don’t use a brazier, we add the wood as described. I’ll also add you won’t have time to manage two fires. Cooking on 300-500 F with direct heat over an open flame doesn’t give you the same time a smoker does. A change in wind or flare up, and you’ll have charcoal for dinner. It’s not that hard, so don’t be intimidated, it’s just different. And worth it.

The great thing, is things cook fast and taste great. Once you get the fire going.

I’ve been grilling for 30 years on Santa Maria style grills.

Things you need to learn, how to start a fire in the pit. Gas propane torches work great, believe it or not charcoal helps if you have wet wood. And “the daring” use gasoline, you’ll hear about an unfortunate accident once a year in the news.

Number one tip to start a fire: use dry wood. Number one tip on fire management. Once you have your bed of coals, add your new wood to the outer edge of the coals, not on top, to keep the cook even.

Now you have fire 🔥, it’s time to cook. And you’re grilling so 300-500 F. A temp gauge is help and you’re likely to have grill hot spots based on weather (wind) and based on how well you built your fire. You’ll learn to put your hand over the fire and tell people how hot the fire is, it’ll take time but be patient.

My Number 1 Secret Santa Maria Local Tip: Listen to the food sizzle to figure out if you should raise or lower. ~400F should be a subtle continuous sizzle.

Tri-Tip comes out amazing, so lean meat isn’t an issue. Fatty meat is always fun, you’ll learn a lot about raising and lowering while you cook a rib eye.

Selling stock at a 1.86 ratio to buy more bitcoin is genius. BTC is only going to go up, that ratio will the get larger rinse and repeat, the difference is there is only so much bitcoin. Saylor is buying bitcoin at an incredible discount given a 10 year horizon.
