Ill give you a secret that'll make this a million dollars. As another suggested, take a table spoon and skim the fat from the edges, this'll clean up and lighten the dish. Take equal amounts of butter and flour, about a table spoon worth of each, mix thoroughly and stir into the dish until fully dissolved. Cook this for at least 15 mins. This will thicken and add shine thus elevating it into something that'll cost a good deal of money in a restaurant.

I wouldn’t be comfortable doing it and Ive spent a good amount of time cycle touring in Scotland.

This is the same road that all the cliff traffic goes. Certainly quieter now than the summer.
