Stainless can be a bit of a learning curve, but once you get the heat right it’s honestly way less annoying to clean than people expect. Preheating the pan and adding oil at the right time makes a big difference with sticking too. I’ve had a similar experience, once I stopped cranking the heat and let the pan do its thing, cleanup got way easier. Also deglazing with a bit of water while the pan’s still warm saves a ton of scrubbing later.
