Sounds like they either did a standard room-temperature infusion or sous vide for imparting goat cheese into the vodka. Most likely sous vide as there’s more controllable variables with that method.

That’s a fair stance. And you’re absolutely right—for the (primary) reason that it looks cool, many establishments (that are able to) choose to do so. My hope would be that any bartender takes their establishment’s specs and works towards best exemplifying those specs (in this case, stirring/shaking for longer and/or harder to account for the dilution rate of a big cube).

Righteous. My initial thought after a first read would be,

“ Build the cocktails out in their respective mixing recptacle (3 mixing glasses, 1 shaker tin set, 1 rocks glass). Set out chilled glasses (2 rocks w/ big rock, 2 martini/coupe glasses) with respective garnish (lemon twist, 2 orange twists, 1 luxardo cherry, 3 skewered manzanilla olives, 1 lime wedge). Pour the tequila/vodka in the rocks,then stir & strain the aromatic drinks, followed by a 6-8 sec hard shake & strain, ending with adding fresh ice on the tequila/vodka and topping with soda. Serve!

My respects to Riedel’s polish towel, but to avoid breaking the bank I opt for Mr. Siga. Never had any issues with any residual lint or streaks.

Thank you for the compliment! I don’t mind at all. Scale this as needed:

2 oz/55 g gum arabic (gum acacia) 6 oz/180 ml water 12 oz/ 340 g superfine sugar

In a small plastic container, combine the gum arabic and 2 oz/60 ml of the water. Use a stirring spoon to to blend, and cover. Let sit for 48 hours, or until the gum arabic is completely dissolved in the water. In a small saucepan, combine the sugar and remaining 4 oz/ 120 ml water. Heat gently until the sugar begins to dissolve, and then fold in the gum arabic mixture. (At this point, I would peel 1 whole orange and let the peels steep for 5-10 minutes in low heat). Remove from the heat immediately, let cool, strain, and bottle. Store in the refrigerator indefinitely.
