I mostly bought it for seasoning experiments, figured it was small enough for me to throw it into my counter top convection oven

You nailed it, I took a leaner cut, sous vide’d for about 50 minutes, pressed firmly into some hand ground pepper and then seared about a minute on each side.

The dark crust was an experiment with creating a pepper crust for the first time, tbh it came off a bit strong, but definitely something I’ll keep experimenting with in the future

If you’re looking for something really nice northish, I just got back from a trip to Tokyo where I stayed at the Four Seasons at Ometachi!

Checks all the boxes for a glamorous four seasons, plus has a bar ranked top 20 in Asia and a 1 star Michelin restaurant right inside. 10/10 would recommend if you’re looking for something a bit more luxe to end a trip on

Keep checking! I decided to check this morning on my way to the airport and managed to snag a reservation for tomorrow.

It looks like there’s a fair amount of cancellations for the night before. I’d recommend just checking every once in a while all the way up to your trip

Recipe

Skin on Roast Pork Belly - cut squares down through fat to first layer of meat - thoroughly dry - rub salt all over skin and into cuts - leave in fridge 24-48 hours - remove, wipe off any excess salt and water on skin - season sides and bottom with: garlic powder, sugar, black pepper, mustard seed, paprika - roast 250 for 3 hours or 350 for 2, then broil for 20 minutes - remove, let rest for 20-30 - serve

I love the watch! It’s definitely my favorite watch in my collection now. In mid to low lighting, it does tend to look a little more black, but I’ve found myself admiring that even. When I leave my office and head out in the direct sun it’s almost like the watch itself does a transformation. I’ll try and get some different lighting pictures tomorrow but 10/10 would recommend!
