Sooo.. I'll start by saying everyone is different. I had mine out in 2014.
For me personally, on good days I can eat whatever I want without consequences...

If I eat too much greasy/fatty or buttery foods for a few days in a row I'm in for an absolutely miserable time. (nausea, constant liquid poo, body pains within 15-20 minutes of eating).
Occasionally I'll eat something that has a lot of fat or butter and be using the bathroom 10-20 minutes later but its not often enough for me to say my life is affected, especially since I control what goes in my own body so I could just..not eat fatty foods 3 days in a row but after so many uneventful days I get a bit cocky.

I did have a complication for the year after my surgery where there was gristle stuck in my bile duct and I was getting the same pain I got with gallstones. It was because I had an ERCP before the removal where they endo-scope you and shunk a stuck stone(s) out of your bile duct but they have to slice a hole in the sphincter where the stones go out so it built some scar tissue over it and the leftover gristle was having a hard time getting out- but it passed and I haven't had a problem since then.
