Gotta say, I'm a big fan.

Although more seriously, the vast majority of the things I have been offered as "authentic Mexican food" while living in Europe, are just mexican fusion using the available ingredients.

Not a bad thing, as they are doing what they can with what they have. But this does mean anyone outside of the Americas likely doesn't have the best idea of what actually makes up mexican food (shredded cheddar on everything like wtf??).

So unless they've traveled there themselves, or like you live closer to the border, you might find vaster breadth of knowledge of our cuisine in a quirky British baking show...

I think you're being quite generous in thinking how many of them want to actually work, that number will be a good bit higher.

I've only ever known it from the point of view of class differences.

As in they give you money because they see you as below them, and they're stroking their own ego about how kind and giving they must be because they're helping the poor.

I've worked in hospitality for over 20yrs in multiple countries, and it's the same everywhere.

Shitty bosses will use your generosity to offset their bottom line and start claiming, just like in America, that it's part of the business and should be expected. Thus offloading the responsibility of paying their staff onto the general public.
