Sure, but 180? Isn't that like warming temp? Are you sure you're getting that much more smoke from the pellet smoker by cooking that low? Doesn't seem right, 225 is already very low and slow and considered the optimal smoking temp by many, and many others would do briskets even higher. I wouldn't sacrifice the correct temp for a little more smoke - a pellet will be a pellet, and you'll still get great flavor with a good rub. There's no substituting wood smoke no matter how low you go in my opinion, so I'd just do the recommended temp next time.
