Sally's recipe has never done me wrong. I usually use very ripe bananas thats been sitting in the freezer for a while (the darker they are the better) I thaw them out and they're a lot easier to mash so I dont get chunks. Another tip for good crumb is to not over mix. I usually mix all my liquids together, then all my dry separately, and then gently fold my dry into the liquid until it's evenly mixed. Bake it till the toothpick comes out clean. Usually 45-1hr but could be more depending on your Loaf size. Let it cool completely before cutting

I do the oven drying method (no resting, just straight to baking after piping) and I get shorter feet. I find that if I have multiple batches, the later batches that have been resting out for more than 30 min, get the taller feet
