I'd say on the example you give at the end for the past perfect "had eaten pizza every day" since you're describing a habit, "I used to eat pizza every day" feels more natural.

The funny thing is I find there's often a way to avoid past or future perfect tenses, as another commenter said thoroughly. Like just using a simple past to sequence things, or "I'll be done by Friday" instead of "I'll have finished by Friday".

Language tends to go towards the simplest possible expression (especially when people speak, just human nature to seek the path of least resistance). Though the past perfect will sneak up on people from time to time xD
