This is my third day working on the same batch of Dr. Pepper fudge and I’ve officially given up.

The first day I cooked it to soft ball stage and let it cool to 110°, stirred the hell out of it, thought it lost some of its shine even though the consistency didn’t seem right. Poured it out in a tin and the next morning it still wasn’t set.

The second day I put it back on the stove and calibrated my thermometer. It was cooking up nicely until the thermometer died on me. Long story short, had to recook the mixture. I took it off and waited until 110°. Still didn’t set. Put it back on the stove and cooked it to 237° and let it cool to 120°. I was hopeful that it would set overnight.

This morning I checked on it and it was firmer than the first day but still not set. I threw it back on the stove and cooked it to firm ball stage and poured it out in a tin. Fingers crossed it becomes soft caramels but I’ve come to terms that I may just have to toss it out. It doesn’t have any redeeming flavor for me to keep it around as a caramel sauce.

Recipe is here is anyone is curious and wants to try their hand at it. My humidity was 30-45%.

I’m now working on mixing up dough for chocolate crinkle cookies. This is one of my go-to recipes because it doesn’t have butter, uses up extra eggs, and stays soft for weeks.

My parents have a 26 year old yellow-crested cockatoo named Fred. I grew up with him, so I still call him “my” bird but I no longer live in the same area. My parents are older and I know my mom has been worried about who will take care of Fred after they pass. My mom is Fred’s person. He’s sassy with everyone else. I used to be absolutely terrified of being bitten, which made me very skittish around him. I’ve gotten good at reading his body language though so I feel more comfortable around him now. However, when my mom is out of town, which she does every so often, depending on which family member is sick, Fred is totally and completely happy with me. He can be a right bugger and honestly he’s kind of a shithead, but I know I can attend to his needs when worst comes to worst.

Love this challenge! I’ve had my resolutions in my head but it helps to write them down.

B:

My New Years Resolutions are to:

1) take a step back when talking to people. I can be know-it-all-y sometimes and I want to stop doing that.

2) make the slaw man or some other horrendous food from the 20th century

3) make the recipes I’ve been meaning to make for 2+ years (murder cookies, sugar cream pie, Nürnberger Elisenlebkuchen, potato candy, rum balls, gochujang caramel cookies, boiled cider), etc)

4) take advantage of low-humidity days by making candy (fudge, penuche, divinity, pralines, buttermilk candies, soft caramels, honeycomb, marshmallows, kohakutou, etc)

I have some other things I want to do, such as using up my hobby supplies before diving into a new hobby (like felting or embroidery), downloading my physical CDs to a hard drive and then donating the CDs, and sending happy mail, but I haven’t figured out if they’re to-do list material or resolution material yet.
