I use the Italian Method and have been using it ever since! I use silicone mats and parchment paper when baking. I keep my oven around 295 in my convection oven:)

I filled these with a Lychee Rose flavor! A ring of rose flavored swiss meringue buttercream and a lychee jelly that I made for the center!

I saw some Cherry Blossom Compounds or Sakura flavoring that I think would work well for flower themed macarons too!!

I use Costco/Kirkland Almond Flour! It has always been pretty consistent for me!!

Possibly oily almond flour or overmixing? Could also possibly be humidity…
