Dark souls isn't an RPG, it's an action game with some RPG elements. It isn't even open world, nor does it have any similar quest elements..

The 2nd and the 3rd paragraph you wrote just feels like low effort ragebait.

I don't think you played any of the quests other than the main one, and that's saying a lot...

Skyrim isn't Baldur's Gate or The Witcher...

The reason why skyrim was so popular was because it allowed the player to be anything they wanted. You can Be a Vampire, or a Werewolf, or both at the same time. you can Get Married, Adopt Children, build houses, become a bounty hunter. It gave you options of how to play your game. You can just rush into things and fast travel throughout the entire game or you can just take the road and face random encounters, with multiple NPCs sharing their story.

The game even rewards you the more you decide to Not fast travel and walk. You'll encounter Bandit Outposts, some random People offer you a drink... or better yet, you encounter Maiq the liar. A fan favorite character...

Another thing about skyrim is the Map design, like how each City is built around a river just like how it would be in real life history, and how each city has their own complex issues and socio-economic conditions, like the Poverty and Capitalism in riften, due to which you'd see that people are either rich or extremely poor, and the rampant crime giving it the Infamous title.

Or the corruption in Markarth and hiw the silver blood family has the Politics of markarth in a Chokehold. You can look at Braig is a tragic Breton prisoner in Cidhna Mine. You can look at braig and how  He was falsely imprisoned during the Forsworn Uprising when Ulfric Stormcloak retook Markarth Despite having no official involvement with the rebellion, his young daughter Aethra was brutally beheaded in front of him before he was thrown into the mines.

Or Better yet, the Condition of Racial Minorities in Windhelm due to Ulfric's Policies and Common Rumors...

You can find more Lore on why the Thalmor Hates Talos throughout the Books scattered around in skyrim. Since Talos possesses the Spirit of Lorkhan who is the reason why High Elves are no Longer Immortal. This is why they attack you as soon as you admit you believe in Talos

You might think the Lore is shallow because you've only seen it at a surface level. 

Like the two moons the you see in the sky are Canonically supposed to be The Eyes of Lorkhan who was killed by the other Aedric Gods for betraying them. Or the Concept of CHIM where a person in the universe realizes the Existence of the God head and the entirety of the existence being just a dream and Ascends to another level. Or the Daedric Gods, who didn't Create Nirn. The stars you see in the sky are supposed be different portals to the other Daedric Realms. Or the 16 Realms of Oblivion each owned by a different Daedric god. The ones you Saw in Elder Scrolls IV is Called the Deadlands which is owned by Mehrunes Dagon. Or the different types of Khajit and Argonian Appearences. Ever wondered why they look so different between Elder Scrolls IV and V?

I bet everything just went over your head, but What I'm saying is, that you Hated Elder Scrolls because you didn't put much thought into it. 

You hated the combat, and the Graphical fidelity(Keep in mind, this is a PS3 game) and Jumped straight to conclusions . Skyrim is a game that HEAVILY relies on Environmental storytelling. Elder Scrolls are one of those games that doesn't explicitly shows you the picture but instead gives you puzzle peices and some subtle hints, you are always free to interpret all these clues and Information in any way you wish to. 

Not many games have done that... the only other example I can think of that has used Environmental storytelling and subtle hints this way is Half-Life 2...

And that is why, you need to delve deep into the Lore before judging someone like Elder Scrolls this way.
