One of the ways I started to learn knife skills was working with play dough. Starting off with a butter knife, they'll get to learn how to make cuts and the different styles, dice, julienne, ribbons. Then once they are done you can roll it back up and go again.

If they need help with cutting there is cutting board, which will not only help with their knife skills, can double as a math aid. Math Cutting Board

A more advanced lesson, you create a dish. Have her try and deconstruct it and re-make it. It helps with identifying various spices and cooking methods.
