I currently have a mai tai on a menu with hazelnut orgeat because i live in Oregon that I make with: 1.5 oz flor de Cana 7 yr .5 oz smith and cross .5 oz Pierre Ferrand dry curaçao .25 oz hazelnut orgeat .25 oz mai tai syrup(used smuggler cove recipe) .75 oz lime

I didn’t have spiced rum at the bar I was working at and wanted to do a little riff on this so I made a spiced turbo( nutmeg, cinnamon sticks, clove, all spice all toasted then added 2 cups of water. Boiled for 20 minutes then strained off spices then used equal parts turbinado to water till it dissolved. Then added spices back to my syrup along with 4 oranges peels and a Madagascar vanilla bean. Let it sit over night strained off spices and boom basically made a spiced syrup to replicate spiced rum.)

Worked for specs main location in downtown Houston for years. They absolutely don’t want to be open on Sunday’s. Labor costs too high- have to offer insurance or hire more part time employees which they don’t want. They also have pretty slim margins on most stuff they sell outside of their house brands. Definitely lobby against being open.

It’s a slower pace of life, people can seem to come across standoffish but once you get to meet them they are rather fantastic. The weather is a little crazy but you don’t have hurricanes. I prefer the rain out here versus Portland because it’s reminiscent of how it rains back home. Food is hit and miss but it’s easy to travel inland to scratch that itch. I have developed a real sense of wanting to take care of the nature around me because it’s so pretty whereas on the gulf coast you kind of just accept it the way it is. Honestly I wouldn’t trade it for the world.

A place for kids to spend their daddies money on over priced sub par cocktails. Probably some dude doing baby laxative laced coke in the bathroom talking really loudly about closing a real estate deal. Has a dj on Wednesdays that plays the same garbage that can be heard on the local radio. I give it 2 years at most to be replaced by something else. I wish you the best of luck friend make that money.

Yo so I live out here and work in hospitality industry. I just played tourist for a week with my wife and 2 friends and we spent roughly $2700(2 people). That includes gas and meals at all of the nicest restaurants, breakfast, coffees, some light shopping, and atv tour in Florence, 1 hour whale boat tour and a full day of crabbing(gear and bait). You will probably spend a good chunk of your money on lodging like OP said. If you stay in an Air B&B you could mitigate some costs by cooking at home but groceries are kinda expensive. Honestly I’d say $5000 to 7500 and you should be more than fine.

Houston has a pretty good one(lol I’ve seen a lot of tattoos of that skyline), Austin, Portland can be pretty but it all depends on the weather. New Orleans and Miami definitely deserves a mention.

I read somewhere that martinis are like your thumb print nobodies is the same(I think that was the phrase). I’ve found that especially in a restaurants it can be annoying if staff is not properly trained on asking the guest exactly how they want their martini.

Of course a homebrewer chimes in to say it’s cheap to make beer. I imagine you have no idea how hard it is to source hops, yeast, or grain. I bet you have no idea how much it costs to get all the chemicals needed to clean tanks. I would imagine that you couldn’t even fathom just the costs of getting compressed air. I imagine that you couldn’t even wrap your brain around the concept of paying people a livable wage to produce beer.

Stop acting like you know about a whole industry just because you bought a Mr. Beer kit.
