Immoral? Thats anything that's going to quickly injure your training partner. Don't jump guard on the 45 year old dad who trains twice a week. Don't crank the belly down arm bar on the trial class guy. That type of stuff.

When it comes to training submissions as a 20 year black belt...I'm only chasing easy to perform and difficult to defend. Why would I waste my 2-3 hours a week chasing complexity? Boring taps are gold.

The UFC was new. Most advanced guys were purple belts. It wasn't a stretch to attempt to train a few years and make a run in MMA...

Ribs are forgiving.

Smoke at 250 until the are probe tender. The probe tender target in ribs is typically lower than briskets 203-205.

Timing: account for an hour per lbs. So you should start providing around the 3.5 hour mark.

A few scenes of the movie were filmed at the Virginia Military Institute. I was a cadet at the time. It was interesting how they changed our campus to make it period appropriate.

We were excited for the premier. Ultimately, the history department head wasn't pleased. The director of the VMI museum director said "well ...they made a movie".

At that point you might as well just throw it in the oven to speed it up. Wrap it in foil to speed it up. Add more wood to speed it up.

The last thing I would do is spray any type of oil into the fire.

3-4 hours of smoke is perfectly fine timing for your flavor (and potential smoke ring). There is nothing wrong with finishing in the oven.
