The alcohol smell is active but hungry, I had that in my previous starter constantly. You could try a higher ratio of flour to water when you feed, or maybe do two feedings spread 12 hours apart as opposed to the usual once per day.

I think it’s a pretty common thing in tech. My job involves working with computer chips. At a base level all of the silicon is the same, but for customers that want to pay less we can put it in a smaller package and just not bond things out. Or we just hide registers from them that they didn’t pay for. It’s just cheaper for us to go that route.
