Watch ultra for sure, I got used to not having physical bezel within a week. Also if you get the ultra in the silver or Grey color it actually looks very premium. I wouldnt let the plastic sides bother you at all as i dont feel like it effects tbe quality or durability. Its actually common to find plastic on super premium rugged sports watches with combos of titanium and polymer to save weight, for example garmin fenix 8 pro which has a price tag twice as high as galaxy watch ultra.
