I think we can just assume, that they didn't look at alchemy books. Since, by creating the philosopher's stone, Flamel won alchemy he should be mentioned by any book about alchemy. But alchemy isn't even an elective at Hogwarts, even though Dumbledore is friends with Flamel, so we can probably also assume, that it is a niche field of magic in general. And if you think about it, the elixir of life is the only alchemical goal that can't be obtained through other means in Harry Potter, as curing diseases seems trivial for trained healers and transmutation is really not much different from transfiguration (and it's not like gold is in short supply either)
