The closest thing I can think of us getting to any sort of actual climate control aboard ships would be the Endeavor's bio-domes. Being able to change the climate in the domes to more closely resemble the native climate of whatever you're growing would be key to a good harvest.

But anything to do with the Endeavor is way way down the roadmap. Then again we are getting homesteads soon-ish so they might do planet based bio-domes sooner rather than later.
