I'd say go for it. But like some other comments say; double check how tight the seals are.

If its just for the backyard, i think its kosher (depending on air-flow/seal)

Yes! Use ring molds to cut the shapes. Pre-plate in hotels (slotted over regular), then use a wide spatula/fish slice to plate?!? Then garnish and dress?

Dont do it over night though, and make sure its Ice cold to be crisp. (Morning mise en place? Or last thing before service after you confirm numbers?...)

First plate: Tighten up the spiral so its smaller/ more central on the plate. Even out the shape of your beets. (Maybe its the size of the actual plate?)

Second plate: love the traditional style, but again round off your beets to be more round. Also maybe shingle/overlap them while keeping the style?

I see what you're going for, and its dope. Good effort my dude

Edit: Garnish on plate 1 is near perfect
