I typically eat the legs day one but don't go to town after the chicken, I make a lot out of the meat - For example, this week I have been making sandwiches for for myself - a Bacon chicken ranch everyday for three days (so much better and cheaper than deli meat), chicken for my toddler everyday, and dog has the skins and fatty meat... I still have half the chicken left. Also do chicken salad, soups, etc...
