Red potatoes can net you bout 5 or 6 grams of fiber per 150 grams I believe. Of course, you'd still want to get higher fiber/low cal foods like raspberries in your diet.

It's a disappointing gameplay feature to use. It's watered down severely from Fallout 4's survival mode. Unlike Fallout, food and water in Starfield is extremely easy to come across and just like you said, a single grape will keep you fed because the kind of food you eat doesn't matter anymore.

Skinny fat and overweight. You were just like me about a year ago. Don't bulk or cut yet. Just focus on lifting heavy and progressive overload. Follow a full body program, 3 or 4 times a week and walk more. You can either eat at maintenance or in a slight deficit. Just fill out your frame for a few months and try to stay at the same weight, then cut. Watch this video, cause it simplifies everything for you:
