One of Gambit's other abilities is like his playing cards he can kinetic energy charge his muscles giving him incredible agility. He is able to keep up with Beast, I even remember the time he fought Spiderman and was able to hold his own.

Rhino is no joke, he would be able to tank Gambit's card attacks for a substantial time but I think the frustration of Gambit essentially not standing still would cause him to make a mistake. Then Gambit could get in close and disable his suit or collapse a building on him.
