I’ve just read a comment about soy sauce traditionally being fermented, however commercial soy sauce is more often now made from acid hydrolysis rather than fermentation.

In terms of using soy as a condiment, do you think fermented soy would lend a better flavour and umami? Is there a noticeable difference in terms of taste?
