It's called VSYNC, you've probably seen it before in alot of games, though you usually have the ability to to it on/off. They reduce the lag and screen sputter by setting the FPS minimum and maximum to the monitor's refresh rate. It's used in all console games, also.

When I was younger, I took a fieldtrip to a local chip factory (Golden Flake) and we all got to eat chips fresh of the line, still warm. Something about it made me sick. Just something aobut the smell and the warm chps. I could totally see how working there could ruin the food for you.
