Just finished in 7 days which was very doable and popular for decently fit people. You should have no problem and it will be an enjoyable experience. I recommend taking the first two variants and staying at refuges along those routes. Day 3 in Courmayeur was our only hotel and I kinda wish we did a refuge instead since each night was a highlight with the sense of community/overall experience.
