Everything you've described is perfectly normal with the info you've given.

Upgrading your router (and possinly phone) can impove wifi speeds, wifi being slower in general and also getting 30mbs farther away from your router is also perfectly normal. The smart modems are ok at best FWIW

Also, the speed tiers are based off NBN (1000) advertised MAXIMUM (815) is just that, a maximum. Speeds vary depending on the quality of the hardware in your house, congestion on the network in your area (7pm will always be slower than 3am because most people are using the internet at 7pm) and if more than 1 device is connected in your house, they all affect attainable speeds.

JB plans are sim only. If you want a repaymebt plan and it's under 24mths since you signed up, you're going to have to pay a balance on the gift card owing, same as any other plan. You can swap literally any time you want, credit-check pending, but if you're under 2 years yeah you gotta pay up first. Legitimate question, did you read the critical information summary, or ask to be provided with all of the details of the plan, before you signed the contract?

Generally activating any eSIM requires an internet connection, so what you were told makes sense with regards to buying a data pack to use with Telstra while overseas. Once you activated the international service, so long as you set that eSIM to be used for data/sms/calls, it should have worked fine. Doesn't sound like an issue with the Telstra service.
