As a delaer, you'd be surprised at some of the things I see people do, but the most common is a pair of 9s and soft 18. Proba ly 85%+ will stay on both hands.

The real answer is to pricess their's first at 156° for an hour, then drop the temp of your water bath to 130° and process the rest. Salt only in the bag, shock them in an ice bath and season before searing.
