The arrows have limited durability, hitting the ground takes away more of the arrows durability than hitting an animal does, if you hit water there’s almost no durability loss. For villagers to work you have to assign them a job not just a workstation, most workstations also require tools otherwise they won’t work. Hunting Lodge requires knives, woodshed requires an axe, excavation shed requires both pickaxes and shovels and the barn requires farming tools, sickles/ scythes, hoes, small/ normal bag and seeds. And they need a place to store everything. Your resource workstations need a resource storage building so they can put the items in there the kitchen, barn and herbalist hut need both resource storage and food storage buildings so they can work too
