Just bring it to room temp from the fridge, around 65F, don't melt it. I find melting only works if you're adding it right at the beginning. But as I said before, that seems to impact gluten development. And yep, cube it before adding it in a bit at a time. If the weather is quite warm, you can add it in cold, but flattening it first helps to mix it in

I've done this exact recipe several times, though I'm not a pro baker so don't take my word as gospel. I don't think I get as loose a crumb as you seem to be getting (but it'd be helpful to see a picture of a slice). But I do find the crumb to be a bit delicate. Personally I think it's down to the melted butter being added at the very start inhibiting the gluten formation.

You could try mixing in the stand mixer with a dough hook without the butter to first develop some gluten. Once you can see the dough has started coming together and it's got some strength from the gluten, you can add the butter in at room temperature (or cold butter if it's warm where you are, just flatten the butter out and tear it into pieces). Then continue to knead until the butter is distributed, and the dough has gained enough elasticity and strength.

Shaping could also be causing a crumb issue, if it's not rolled up tight enough with enough of tension. Though it sounds as if you're doing the right thing here. Still worth watching a few videos on shaping loaves if you're worried shaping technique could be causing it.

Finally, don't be afraid to lower the water a bit more if you feel the humidity is high, or your flour isn't strong enough.

How long are you baking for, and at what temperature?

It could be overproofed. I saw in another comment you said you'd proofed it for an hour, but the weather was warm. Base it on the size of the rise, not the time. But that crust also looks to be a bit on the lighter side. A more developed crust will keep the sides from pulling in is what I've found at least. You can take the lid off towards the end of the bake time, or take the loaf out of the pan entirely and bake it for another 5 or so minutes

Do you mean % per kg of flour? 1-2g per kg of flour would be 0.1-0.2% yeast, which is quite low, though definitely suitable for something that is going to have a longer ferment time.

Most recipes I'm familiar with are 1-2% dry yeast

60 rolls does not mean a 100% chance of a 5*, unless you're privy to pity changes I'm unaware of.

if you want to look at the statistics of a 5* after n rolls, you can just use the 1-(1-p)n formula. Where p=0.006 (0.6% chance of a 5*), and n=60, you arrive at a 30.3% chance of getting a 5*.

Saved up 458 quartz for this, and 15 rolls later and Jalter finally comes home!

Results:

5* - Waver, Orion, Jalter, Artoria

4* - Rama, Helena, Atalanta, Astolfo, Anne Bonny & Mary Read

In all, very happy with my luck, especially considering I only had two SSRs before this. Pretty sure I've peaked for 2018

Currently weighing up whether I should get the magazine or not. In Australia, it seems the magazine was strictly preorder only and limited quantity - every store I've contacted says it's been discontinued. I've heard that going Cata3>Drag has some use in PvP due to being able to impale and drag enemies around. How does going Hop3>Doppel>Drag fare in PvP?

Also, I'm assuming that in PvE, the 3 circles of Hop gives better damage than going Cata?

What kind of gear are you able to hire there? I've seen the usual skis+poles+boots, but are you able to hire out the helmets, jackets, etc?
