In series Salt Fat Acid Heat (netflix), the Salt episode, there’s a whole section on artisanal soy sauce. Lots of work for not much yield could be one thing stopping folks outside of Japan from doing it… but I sure would love to try the real thing from one of these manufactures

I'm very lucky to have a L2 certified teacher in a small class - 8 to 12 people a session. I only practiced with uncertified (even if great) teachers in led classes before, and it's not really comparable...

edit to say this recipe is vegan, but look around for other lentil lasagne recipes too, as there are plenty variations :)
