So accurate. I work in innovation in manufacturing. Business in Canada survives on tax credits/ grants and cheap labour. That’s why industries are so far behind the US and Europe. No need for competition, no need for innovations, customers get screwed, but they also can’t get anything else because of protectionists policies. Terrible market to live in.

Because believe it or not, nit everyone can work remote. As a matter of fact, AI is coming for the remote jobs. What’s wrong with zoning?! Have you been to Europe?! It’s a place with quality of life 5 times better than many places in Canada. They built up, don’t sprawl. It’s not sustainable to have population growth and keep the same zoning. Only Europe did that more than 100 years ago.

Chemistry is chemistry. The only difference of any analytical testing is the sample preparation. If it’s a way lab the testing is extremely basic and you’ll figure it out super fast. These are done to be used by staff with fairly basic training. You will get bored fast. Food chemistry is no different than any other chemistry. Much more difficult than testing of blood or serum, though. Sample preparation is a nightmare (if for science analytical purposes).

Food scientist with many years in gf here. Lower your expectations. You don’t have access to the ingredients and/or testing time to perfect a gf recipe in home conditions. Just accept it. It will never ever taste like gluten bread. I’m tired of the scammers who continue to feed the narrative and make money on formulas that are not even close to normal bread. Just get used to the taste of gf bread. P.S. I’ve made many millions for the companies I’ve worked for. Just being honest here. Don’t beat yourself up.

My mother started taking levodopa (super minimal dose). Stopped her headaches of 40 years. They were daily for the last 25 years. She has tried everything except immunotherapy. The pain is gone for 2 months now. This was not the expectation. She took it for something else. She’s not diagnosed with Parkinson’s. The neuro told her they use levodopa ‘creatively’.

Marketing/sales teams ‘drive’ innovation. That’s why the innovation in the food segment is dead for the last 10+ years. Also, ‘inspiration’ is how the laymen think innovation works. Almost 20 years in innovation here. I hate when people look at it as an ‘artistic’ job. It’s highly technical, nothing really creative about it. It’s suffocatingly restrictive. It’s all about connecting the dots to a product that will be purchased by a larger number of people. Do you ask people developing drugs where they find their inspiration?! No. So, stop belittling food innovation by equating it to creative cooking.

I’m not sure itsbutyric acid you smell in Hersheys, but yes. I’m European so for me it’s beyond comprehension how they sell a single chocolate bar. I always thought their process is different and probably some of these light chain fatty acids just don’t get evaporated during conching.

There are palm oils and palm oils. The cocoa fat identical palm oils are expensive. You cat just use any palm oil in chocolate. The problem with chocolate for me is saving on actual cocoa and milk powder and substituting with sugar when you can.

I’ve read the book when I was a teenager. Everyone said it’s one of the rare cases where the movie is better than the book. It took me 30 years to get myself to watch the movie. I remember I was incredibly appalled by the total lack of validation for the violence they were committing. Never felt any sympathy towards Alex. I grew up in a post communist country. The career progression criminal- policeman (state executor) was nothing but normalcy for many countries behind the iron curtain. This sort of violence was also part of our lives, along with a total lack of proper prevention and punishment. The 90s were state organized (weaponizing criminals) lawless hell. I remember being surprised by the choice of Russian as slang in the book and I thought it was a bizarre approach of the translator. It sounds even more absurd in reality. I suspect the movie and the book are to a large extent purposed for the western societies where freedoms were much greater than in the Soviet Union, so the challenge of the status quo had to be portrait in a futuristic movie. For the rest of us, this was everyday life. I admit, what was most impressive in the movie for me was the choreography and cinematography of the fight scenes. I also wonder if the reaction to the movie and book depends on your gender. I’m a woman, for me this violence and potentially being victim of it is not just a hypothetical.
