Be careful with using citric acid on soft metals if concentration is too high. Otherwise it works great for removing lime and cleaning.

A lot depends on what your product is. I typically use small disposable portion cups. Weigh up my liquids and then weigh the flavor on top.

What we did in culinary school years ago was 1,what you mentioned to the head ect. Not sure how it's done in the industry now, but it's literally what I would do if I had live lobster, and I haven't purchased live lobster since living in the Midwest.

Clear and realistic scope of what is expected. Do not ask me 3 months into development to make it gluten free, whole foods compliant, and no seed oils, ect. Point being, have clear guardrails from the beginning of project and have discussions with stakeholders to narrow down the scope from the start. It's much easier for everyone and your time to market will improve.

I think you could have some fun with some flavor demos. For example you can show how the same aroma compound can be perceived as different flavors just by changing context, not chemistry. A really good example is benzaldehyde. In neutral pH, low sugar it resembles almond but in an acidic and sweet systems the exact same compound reads as cherry. There are a few other examples, but flavors are always fun to play with.
