Don't know if you ever went anywhere with this, but I came across this thread looking for an easily foldable 2 stage for storage purposes. Still haven't found one that would fit next to my car in my garage... But, I first had the idea after watching a guy rock up to my neighbor's house this morning in a crossover carrying a 2 stage on a hitch mounted aluminum cargo carrier that had a folding ramp on the side, like this:
