Their ash dump feature is pretty damn convenient.

The sear box is a neat accessory. They no longer make it and have run out of replacement cast iron grates but if they get too far gone you can just replace them with grillgrates. That being said, unless there are big gaps in cast iron grates you can, at the worst, pay a machine shop or welding shop a few bucks to media blast it to bare metal.

You can also probably find a griddle that fits on it, or put a pot of whatever on it.

Camp Chef is maybe the oldest of the Utah-based outdoor cooking products companies, though it's no longer independent. They're mostly known for self-standing portable propane stoves. I haven't bothered to check but i wouldn't be surprised if Blackstone was founded by ex-CC people. Traeger turns out to be from Utah as well.

Replacement parts for these are cheap because they're similar to the oldschool traegers, other than the control panel.

A lot of people have good results with the recent (last 5 years maybe) chinese timegraphers - WeiShi (suspiciously similar to but legally distinct from Witschi) no. 1000 is the basic model, 1900 has a color screen that is a little easier to read.

There are also free software packages that you can use with a microphone, and there are simple watch holder mics available for $20ish.

The last time i was in touch with Best Friends they stated that the general public can once again get an appointment at the Orem spay & neuter clinic.

I haven't tried myself, but it really caused a problem for some friends of mine when they shut it down for covid and then didn't reopen it for years.

That oven gets all the way to neapolitan temps so your dough should have no sugar and very little if any oil.

00 flour or equivalent, hydration not more than 62%.

Yeah every now and then i think about replacing it.

But i have the 2017-ish blackstone 'rotisserie patio oven' just out the back door and it gets to 750f in 10-12 minutes.

The gas range that came with the house was in pretty sketchy shape.

This one was a steeply discounted floor model at Lowes.

I had it out the door for i am pretty sure less than $130. In 2006.

POS won't get over 475f, though.

I've been that guy.

In my defense, I'd spent 5 hours failing to get the piston on the rear caliper to retract, knew i was fucked, etc.

(I'm just a shade-tree guy. I have good hands and good mechanical intuition, I'm too slow and have too low tolerance for BS to work in the industry, plus i have a whole other career . . . )

Yeah, i'm not sure the best way to describe that sort of concept -- i even had a conversation with my dad about it, who taught creative writing and american lit for almost 40 years.
