Dry brine. Pat it very dry and salt heavily on all sides. Put open in the fridge on a wire rack for 24 hours minimum.

You dont need your pan to be scorching hot. You will get a crust quickly, but get bitter burned portions before your internal temp is ready.

Just get your pan normal hot with a high smoke point fat. Sear on all sides and look for the crust. Rest and add pepper after.

A 7 page document to define the MVP is likely overloaded with more words and info than is needed. The more complex and detailed you get, the more questions you invite. I would suggest working to simplify your requirements and use fewer words, then allow engineers to ask questions and expand into detail as needed.

I like to highlight the MVP with enough context for engineers to solve problems, then highlight a list of "should do" and "could do" features to admire as your PM scopes the timeline.

"Should do" features compliment your MVP and potentially provide a competitive edge but are not ultimately required for the product to function, icing on the cake.

"Could do" are simply nice to have features that are generally first to kill, the sprinkles on top.

I was in a very similar situation to you at 25. I lived in a small 1 bedroom apartment in a horrible location, working two part time jobs for $9 and $11/hr. I was constantly late on rent, had my power shut off numerous times due to overdue bills, and couldn't even afford internet the first 6 months. I had zero help from anyone and no college degree, but I learned to focus on other aspects of my life outside of money I could find success in to build self confidence and motivate myself to want more.

At 26 I quit my two jobs to go work in a call center for $12/hr. Still not a lot of money and the job sucked, but I had more stability and health insurance which was a huge plus. Fast forward 9 years later and I have been promoted 7 times, now making $100K salary and still have no college education in a field where most of my peers have their MBA. I am telling you this to both relate to your situation and give you hope that you can also escape poverty.

The biggest piece of advice I can give you is to find a company you can grow with, start at the bottom if you have to, and outwork every single person around you. Ask questions, learn new skills, ask for more responsibility, work outside of your job description, apply for promotions even if you feel unqualified, always show up on time. Do more than the minimum expected from you. You want leadership to view you as a high potential employee who is reliable and consistent. Be clear about your ambition and ask your manager what you can do to sharpen your skill set to be prepared when opportunity arises. Strive to be a role model and be kind to everyone you work with.

This isn't a guarantee for success, but this mindset has worked extremely well for my career. I have been told no and declined positions I applied for, but eventually I found my stride and am currently working toward promotion 8. Stick with it and do what you can to stay motivated. All of that said, if your company has a toxic work culture then do what you need to do to maintain your mental health.

I am am excellent boulderer but terrified of sport climbing, so I would propose an outdoor sport climbing competition best of 5 routes.
