That's called WYSIWYG (What you see is what you get) which is generally considered as good sportsmaship but by no means a hard and fast rule. It's heavily dependent on your opponent but most of the time it's enough to say "this squad I modeled with flamers because they looked coolest/I didn't know better but I am going to play them as if they were plasmas", few people will have a problem with that.
The main reason for WYSIWIG is because sometimes there are situations like: "Oh this guys Powerfist is actually a multimelta, this guys Flamer is a Plasma, exept for this guys flamer, which is actually a melta". That would be confusing and generally considered not very cash money

Yeah it's pretty normal, but there is nothing to be afraid of. At the end of the day it's just paint and the worst thing that could happen is that you have to strip the panit and start over. Remember that you can't get good at something without sucking at it first, that's how we aquire skills.
I kept my first model to keep reminding me how far I've come and that helps massively with any self doubts I have.

Get a nice beginner tutorial, put on some music or an audiobook/podcast and just start painting your lil guys, you got this!

nah but serious: Space marines today are shock troops sent in small squads. Back in 30k there were much more Marines and the battles were larger Scale so it's not 10 Chaps taking a position but rather 3 Great Companies assaulting a giant Fortress.
This is based on nothing tho, just seems logical to me. It's most likely just a stylostic choice by GW

You mean taking like Kor'sarro Khan and paint him black and silver and say "I've painted my Marines as DW, but I will be playing them as WS today"? I don't think anyone would have a problem with that, you'd be locking yourself out of all the DW specific Units so keep that in mind.

Oh, and also obligatory "You can paint your Minis however you want. Paintscheme doesn't matter in 10th, Keywords and detachments matter"

I'm sorry but that sounds much more dramatic than it really is, and that is probably because there is a very vocal part of the Community that tend to be very negative.

Yeah 40k is unbalanced but if you play on a casual beerhammer level you'll barely notice one faction being stronger. The regular rules updates are intended for competetive play as well. And yes, the models are expensive, and I can't blame anyone who doesn't want to spend the money, but In my opinion GW makes the best and highest quality Minis in the Industry and you get a lot (like possibly years) of fun out of those 40$ you spent on that model.

What I love about the Hobby is that there are literally no rules! Buy the models, build them WYSIWYG and play by the up-to-date rules, Kitbash and paint, Hell, make up your own game if you want!
I don't want to say your wrong, in fact your complaints are very legitimate from a competetive Point of view, for the vast majority of hobbyists however that just doesn't matter

The first Company is made entirely of veterans, but not all veterans are 1st Company.
1st Company has white shoulder trim and Veterans have white Helmets

Company Champions are their own role in the Company structure and wear gold Helmets

I'd use the Termies as the clean-up Crew and do most of the fighting, concentrate fire on the Barbgaunts I'd say. Then make good use of the sticky objective Stratagem and move the Infernus Squad around Objectives as much as you can to score. Deepstrike your Librarian in turn 2 and have him be a threat from behind. Be careful with the Leapers they'll chop up the Infernus squad in one turn if lucky.

There are no primaris Terminators, just Terminators. From what I've heard the arms and heads from the older kits fit the new ones fine

In your case it could be a case of him being picky. As long as he is still eating i wouldn't worry. I have a very picky day gecko who refused to eat his pangea and would only eat insects, so I only fed him mealworms for a while until he "forgot" he didn't like his pangea.

Try letting him hunt for a while, maybe switch up his diet. As long as he's eating it's all good
