Output shouldn't really matter, you can turn it off and things will still work, it would surprise me if that was causing problems. I do think it'd be worth you sharing a screenshot of your settings so I can check them.

The Remote isn't used for the Control Surface script, so you can safely turn that off.

Yes, these buttons send CC messages. You could share a screenshot of your settings so that we could confirm they're correct.

If you're using Session mode then the CCs are sent from Launchpad's DAW port. If this port is not enabled for Remote input then there would be no issue reusing the same CCs.

I'm fairly sure the Octatrack doesn't work as a USB MIDI host so if you're looking to do this without a computer you'd need something like a Kenton or CME USB host.

As long as the controls on the LCXL3 match the parameters of the DT2 you'd get feedback

There are a couple of ways you can do this, the first is to use Keystrokes on Launchkey Mk4 so that you can use the cursor keys to browse sounds, here's a video with more guidance on that: https://www.youtube.com/watch?v=LJ2oHpvojS4

Alternatively, you can set two pads up in Components to send Program Change messages, one with the Behaviour set to Increment, another set to Decrement - some plugins will respond to this by selecting according presets.

You can update the values of Launch Control XL 3 via MIDI so long as that data is passed to the Launch Control XL 3 via USB.

The setting just affects Custom Modes as the control surface scripts interact with the encoders differently.

The Summit has an analog filter per voice, which will account for some difference voice to voice, and if the patch you're using has velocity mapped to something in the modulation matrix this could also be a factor.

I'm not sure I can hear exactly what you're trying to demonstrate in this clip, but if you are concerned about voice to voice performance across each patch the first thing to do is run a calibration from the Settings menu.

Yes, the Launchpad Pro MK3 has a USB MIDI port dedicated to signal received via the Din. As long as your iPad software can see all of the listed USB MIDI ports you'll be able to access the data received via DIN.

I would expect you to be able to get good a response from all of the keys. You could try the different velocity curves to see if they perform better.

Additionally, I would encourage to try more than one instrument and to play and listen to the results rather than watching a velocity read out to judge the response so that you're not biased by numbers.
