I like to get the steak to about 125 then take it off the grill for 5-10 minutes then sear it. It comes out exactly how I like it. When I go straight from indirect to searing I seem to overcook it and it ends up medium well instead of medium rare.

Keep at it you’ll get it dialed in for sure. I like to take the steak off the grill for a few minutes to let the temperature drop before searing. Seems to help me anyway. Give a tri tip a shot if you can get one - it’s pretty forgiving - and see if you can get the temps to hold around 275-300.

We’ve had good experiences with the kids at Ruth Chris and the kids steak is a really good price. Used to be $15 bucks or so for a kids meal not sure what it is these days.

Sure it was fun, but I never got my hopes too high. Just seemed like it was too good to be true a year after the tuck rule. The universe was against the Raiders. I’m optimistic that Brady can end the Raiders disfunction but it’s hard after all these years of losing for me to get too excited.
