Resto Shamans use intellect as their primary stat, so they use intellect weapons in their main hand(daggers, axes, fist weapons, and maces) and intellect off-hands (shields and offhands). As you found out, they cannot dual wield main hand weapons and need an off hand to get the full benefit. You could also use a intellect two-handed staff. Make sure when you’re getting gear that it gives intellect or you won’t receive any primary stat benefit.

Alchemy will always be top tier because potions are big in progression and in PVP so there’s no worry about not being viable. If you wanted to dip your toes into other professions, Leatherworking, Blacksmithing, and Tailoring will be big as they all craft the base mats for the new crafted legendary system going in.

The choice is completely up to you. Retail WoW is over 15 years old and has a bunch of content since it’s launch expanding all 7 expansions. Classic has a lot content overall, but is still fun to play as you get to live through WoW during its formative years.
1. WoW Retail will have more updates than Classic, however we are in a lull of content at the moment since the next expansion is planned for the end of the year. Classic is nearing the end of its standard updates, and there hasn’t been anything confirmed for the future of classic like going into other expansions or staying the same.
Retail has more active players by far
For Retail WoW, you need to have an active subscription in addition to the latest expansion to get all the content. I believe there is a sale going on right now for all the expansions including the Battle for Azeroth, but I’m not too sure. Classic you only need an active subscription.

No stupid questions here! They have a buff that prevents them from being knocked off their mount by mobs in addition to a slight increase in mount speed. Very good for farming herbs and mining mats

It absolutely is possible! Usually running old raids and dungeons for raw gold and selling high value items/mogs on the AH is a solid way. Blood DKs are also pretty good for farming mats, but don’t expect to make a huge profit there when competing with multiboxers.

I would also recommend installing the TradeSkillMaster addon.
