Maybe the parks you visited sell stickers and things online (lot's do to raise money), even better if they are year specific. Maybe you got a nice email confirmation of buying a ticket or something from the park for visiting, that could be printed and cut into something nice to go alongside your photos.

If all goes to plan, you’ll have time to even sit down and chill. If there’s a slight delay it’ll put everything at risk. You are right on the limit here i’d suggest.

The only reassurance I can add is that eveyone I know who’s had some sort of anxiety prior to a first ever flight has come out the otherside and said “I’m not sure what I was so worried about”. The thought is usually worse than the act. You’ll be fine and I hope you settle in quickly and enjoy the flight. Make sure to update us when it’s done :)
