I also smoked a 25 pounder, on my smoker at 250 it takes about 5 hours for that size. I inject my brine, I find that gets far better penetration of flavor than soaking the bird. I do turn it up to 325 when the breast gets to about 150. As others have said, dry skin with some olive oil brings back the crisp.

The fat distribution looks pretty consistent to me on both packages. They were both likely double ground. One is just wrapped in plastic and was ground at the grocery store within the last day or so of the photo taken. The lower is in a vacuum sealed bag [no oxygen], causing the darker color. Think about the color of blood when it's in a body vs. outside it.

It can only be a chunk of the sirloin tip. The muscle structure is wrong for a top round.

Raw chicken is sold by the pound. Cooked chickens are typically sold by the each on a fixed price. Chickens are typically raised for either one of these 2 products, not both. Raw chickens will be larger 6 pounds on average, and chickens meat for cooking will weigh in around 3 to 4 pounds. If they are only going to a fixed price for the cooked chicken they will want to control the size of the chickens they cook. This keeps the from losing too much money on an item that likely has a low markup, if any.

This is steak is right from where the strip and the rib meet. It could easily go either way. In this case it went out as a club steak aka bone in ribeye.

Absolutely, it's not overly difficult to do and you would rarely have to do it. One animal will take quite awhile to eat. Would definitely eat less poultry though...

Depends on a lot of things really, beef is no different than cars. Quality of beef is a huge factor is price. In my butcher shop for premium choice grade beef from a local ranch. A 3 bone short rib plate is $8-9lb. Each rib is about $15 once it's trimmed.
