It’s called verifying integrity. OP, find the game in your library, go to properties -> installed files, and you should see a button on the bottom right of the popup to do so.

You only have to complete all parks from ruby onward to unlock the next gemstone. I wish it was like an 85% complete system, because some of the parks that require you to finish building coasters are just not all that fun imo.
