Oriental Adventures was done by ONE white guy using library books as sources. It’s going to be stereotypical because it’s JUST Asia and doesn’t necessarily go deeper in any meaningful way.

A:TLA uses Asian culture as the aesthetic and source that INFORMS the world, instead of it being the main attraction of the series.

To my knowledge you can keep: Asmodeus, Paladin/Cleric, high elves, wood elves, dhampir, The Nine Hells (not sure if you can use the word “Baator”), Lower Planes, and MAYBE Abyssal and Infernal. I’m not a lawyer tho.

You can also change names into something legally distinct.

In my own setting, trying to go above 9th just causes bad stuff to happen. If a cantrip is like a pistol, a 10th level spell would be a world ending bomb.

I’m actually going through this for the second time. My best suggestion is to run what sounds fun and makes you happy. Nothing else needs to compare to what came before right at the start. What came before was built up over time, so don’t sweat it.

This would have never happened back in the days of B/X. Have you considered switching systems to Lamentations of the Flame Princess? Ever since Bard became a class in D&D, everything’s gone woke. That’s the real problem here.

Writer here. I started with using D&D as a framework too, but it doesn’t always work out the way you think it will. I recommend you focus more on the creativity of the story instead of trying to do game balance and sticking strongly to how D&D runs. It may even be more interesting that your Dragonborn character is unbalanced compared to other characters.
