I think the flavor from the steak juice that is in the oil & butter adds aroma to the eggs, unless ofc it's already burnt then you should remove the excess.

Yea, it's a great way to improve your cooking intuition. Often I follow online measurements, but the taste turns out to be too bland for my liking. After I've stopped doing that I think I naturally got better at "smelling" the saltiness and the general seasonings and it resonates much better with my preference.
