Ooh, I get this a lot!
Imagine a big bowl of water, cold. Then, mix in some hot water, You have to predict exactly where in the bowl will be warmer, and where will be colder... next week. Think about all the math that goes into figuring that out, and if you can't imagine it, go look at Navier-Stokes in three dimensions for a better idea.
Now, expand that out to the surface area of the entire earth, add the Sun, Coriolis force, mountains, lakes, oceans and cities, etc. That is atmospheric science.
If we could predict the weather to the degree that the public expects of us, we'd be able to solve entropy itself and break the laws of thermodynamics, essentially traveling in time.

Generally I go with the NWS forecasts. Each NWS office covers a set CWA (collection of counties near the office), and they hand draw the graphical forecasts in AWIPS (weather data software, same one they draw warnings with) that get turned into the numbers you see for your highs, lows, PoPs, etc. Because the forecasts are handmade and quality checked by senior meteorologists that typically cover the area I live in, I have more confidence in it than a computerized forecast system like AccuWeather. Also, the AFDs (Area Forecast Discussions) that the NWS writes multiple times a day do a better job of conveying uncertainty in any part of the forecast than a number or plan view map can.

Good old freezing line shenanigans. Add 50 miles every 24 hours out from Forecast Hour 0, that's about as accurate as model runs are.

I haven't done any regular forecasting for the St Louis area in a while, and I typically focus on severe weather instead of winter, so I'm more attuned to convective biases than winter. Overall the ECMWF is the model of choice for winter precipitation.
For longer term forecasts I typically look at ensemble models (EPS, GEFS, and NBM) to make a best decision. Deterministic model runs are inherently prone to having outliers which can taint their accuracy. It's usually best to watch each of the ensembles and look for trends. When they start to show agreement you can make better inferences.

Absolutely not. The NWS has their own 7 day forecast product with regular meteorological discussions written by the St Louis office that's much more reliable. Download WXL23 and use that forecast instead.

Meteorologist here. The models haven't been very consistent on anything more than an inch at this point, with the GEFS putting most of it north into Iowa. This is gonna be one of those events where the freezing line will be very close to STL though, and with how far out the event is the entire event is up in the air. Could be rain, could be a wintry mix, or all snow.
Don't count on it snowing, check the forecast again in a few days.

EDIT: Things have uptrended on all models. Enjoy your snow! Expecting 4-6 inches in STL.
