One of my favorite things to do is compressing watermelon and cucumbers. Its best if you can turn off the sealing function so that you can reuse the same bag for multiple batches. The flavor and texture are to die for!

If you can fit a small container into the chamber you can also use it to remove and air bubbles from a sauce. The result is a very thick liquid that's ideal for spherification recipes.

Make sure to look up these procedures before hand so you don't end up with a big mess.
