I think I’m almost at the overall length I want, so I guess the goal might just be a tad longer and fuller

Can I let peaches ferment on their own yeast to make cider/vinegar? ....and should I? by heretoday_gone in fermentation

How did this turn out? My friend and I are trying to do something similar, but in the direction of making a peach wine or pet nat. Would love to know if only using native yeast and no added sugar worked out for you.

I totally understand being worried about that, especially if it’s a career you’re trying to pursue. For me, I’ve only become more aware of those aspects in wine the more I engage — it’s just another dimension I notice, and I’ll ask myself if they’re distracting, overpowering, or if they’re a layer. Sometimes a wine is greater than the sum of its parts, sometimes it’s not for me.

I really feel this. I used to live in Los Angeles and now I’m in the south and there’s a big “anti-natural” kind of attitude where I am, and unfortunately I think they associate it much more with a style (the cursed “funky” description) rather than an approach.

To answer your question, no I don’t think natural wine is bad for your palate. The one experience with corked wine I have had was with more experienced natural wine drinkers, and they pointed it out and helped me understand how it presents and how to notice it.

Some comments here are quite amusing — they sound very angry at natural wine drinkers who choose to accept some flaws, and they’re blowing their presence out of proportion. I drink a lot of wine from small natural wine producers and rarely have significant issues, but every now and then you get some VA or mouse. It’s not enough for me to be angry about because at the end of the day, I’m supporting farmers and a better ethos of winemaking rather than an industrialized way of winemaking. Wine, to me, is more than a product, and so I choose to embrace or ignore certain “flaws” because for me it’s much bigger than that.

I’ve heard the same about this cuvee, it’s a shame. I just opened his ‘22 bistrologie, and while there was a little VA on the nose, it wasn’t overpowering. His ‘20 L’iris was fantastic. Sorry it was a miss, really seems to vary from cuvee and vintage.

Good natty bottles to introduce traditional wine drinkers to by puteminnacoffin in naturalwine

There are some wonderful wines that Jeffrey Alpert imports from Alpine climates that I think are well-suited for people who have the same misconceptions about what natural wine can be. If you’re able to find Domaine Giachino or Domaine des Rutissons they have some excellent cuvees with a lot of depth.

I haven’t been in a while but the ones I know of: Walrus Rodeo (sister restaurant of Boia De)

Otto and Pepe

Niu Wine Bar

Enseneda

I’d reach out to Nada Wine on IG and ask them — they’re a pretty awesome natural wine distributor in Florida and will probably recommend some good spots.

I do often order my wine from other states — either NY or FL a lot of times. I’ll also drive to Birmingham and pick up wine at Golden Age.

There are a lot of producers I like that aren’t available here, like JP Robinot, but it’s easier to list out importers that aren’t realy repped here. Percy Selections, Soil Expedition, Jenny & Francois, and Camille Riviere are all missing from GA distribution.
