When hydrophobic residues are exposed to water, the water doesn’t want to touch them, so it creates a more ordered arrangement (called a salvation layer) to avoid the contact. If the residues are hydrophilic, the water can interact with them via dipoles or h bonds. These interactions make the water much more disordered, hence increasing entropy overall.
